Focaccia

Baguette Rustique - Focaccia, an Italian rustic type of bread enjoyed as a side dish or just on its own.

Baguette Rustique 2.500 gr Focaccia ingredients
Strong flour Τ70% 7.500 gr Focaccia ingredients
Yeast 250 gr Focaccia ingredients
Water 7.200 gr Focaccia ingredients

Priprema

Mix all the ingredients (add the water lastly) at low speed for 3 minutes and then switch high speed for 7-8 minutes.

Allow to rest for 60 minutes in slightly greased bowls.

Scale the dough into 200-250 portions and lightly press the dough so as to form a focaccia shape (either on a tray or on a working surface).

Add ingredients of your choice.

Allow the dough to rest for 15-20 minutes (at room temperature).

Bake with steam at 230°C for 15 - 20 minutes.
